Le Méridien Saigon is delighted to announce the third chapter of the renowned Pause + Savour Guest Chef Series, a unique culinary event that brings together chefs around the region to create an unforgettable dining experience. This chapter, aptly named "Hong Kong Inspiration" will feature a remarkable collaboration between Executive Sous Chef Gordon Tzang from JW Marriott Hotel Hong Kong, and Executive Chef Phi Công of Le Méridien Saigon.

A Culinary Symphony of Vietnam and Hong Kong
Hong Kong Inspiration celebrates culinary artistry, blending the rich and diverse flavors of Vietnam and Hong Kong. Guests will be treated to an exquisite menu that showcases the best of both worlds, with each dish meticulously crafted to reflect the heritage and creativity of these two vibrant culinary traditions.
Meet the Chefs
Executive Sous Chef Gordon Tzang of JW Marriott Hotel Hong Kong brings with him 26 years of culinary expertise, having started his career with a chef apprenticeship at JW Marriott Hotel Hong Kong in 1994. Rising through the ranks to Assistant Sous Chef in 2007, Chef Tzang further honed his skills during his tenure at Renaissance Shanghai Zhongshan Park Hotel as Acting Executive Chef. In 2022, he returned to JW Marriott Hotel Hong Kong as Executive Sous Chef, playing a key role in reopening Fish Bar and driving the hotel’s culinary excellence.
Executive Chef Phi Công of Le Méridien Saigon, honored as Chef of the Year 2023 by LUXUO Asia Awards, has 18 years of experience at prestigious 5-star hotels and resorts. Having honed his skills at Cheval Blanc Randheli, a high-end resort by LVMH, Chef Phi Công is known for his innovative culinary vision that engages all six senses. In the 2024 Chef's Table Series Pause + Savour, he invites top chefs worldwide to join in a celebration of diverse cuisines.
The Menu
The Hong Kong Inspiration menu will feature six curated dishes that highlight the culinary traditions and modern interpretations of Vietnam and Hong Kong. The flavours that all Chinese Food Lovers would love to try like Tartar with vine-ripe cherry tomato infused with Chinese wine, the favourite Milk Curd from Hong Kong will also be prepared by Chef Gordon with a special twist. You will also taste some playful colorful dishes for the first time like: Crab & Squid come with pomelo and plum compote, red dragon fruit coulis bring out the freshness of the harbor in collaboration with the Vietnamese tropical fruits, or Braised Beef Cheek with Lixian yam, goji berries cabbage, Szechuan pepper sauce – a famous Chinese street food in Vietnam but upgraded to the 5-star level.
On the other hand, come to the Latest Recipe Restaurant, diners are invited to savour the flavour of Hong Kong through familiar dishes but elevated by Chef Gordon like: Yee sang salad, Chef’s dim sum, Chef’s pork char siu bao bun, Fried pork wonton, Nanjing Salted Duck, Marinate Nanjing Duck, Slow roasted beef topside with soy ginger glazed, Braised pork rib noodle soup with pork choy, black mushroom, wonton, Cantonese style… The Chef from JW Marriott Hotel Hong Kong will elevate your familiar Chinese foods.

VIETNAM’S IMPORTS FROM CHINA TOP US$50 BILLION IN Q1
Vietnam’s imports from China in the first quarter of 2026 surged a staggering 31.6% year-on-year to more than US$50 billion, accounting for around 40% of the country’s total imports, customs data showed. The increase was driven largely by technology goods and industrial equipment. Imports of computers, electronics and components jumped 62.2% to US$16.77 billion, while machinery, equipment, tools and spare parts rose 25% to US$9.72 billion.
VIETNAM TARGETS OVER 30 AIRPORTS, 25 RAILWAY LINES BY 2050
Vietnam plans to expand its nationwide civil aviation network to more than 30 airports by 2050, with total capacity reaching 533 million passengers per year. Minister of Construction Tran Hong Minh told the National Assembly on April 20, as the country accelerates decentralization and diversifies funding sources for transport infrastructure.
FIRST-QUARTER GROWTH HITS RECORD HIGH DESPITE GLOBAL VOLATILITY
According to Dragon Capital, Vietnam’s growth momentum strengthened in March following Lunar New Year normalisation, reinforcing confidence that the expansion remained firmly intact through the first quarter of 2026. GDP grew 7.8 per cent on-year in the first quarter, with industry and construction rising 8.9 per cent and services 8.2 per cent, highlighting that growth is not solely reliant on exports and manufacturing, but is increasingly supported by services and domestic demand.
FRUIT AND VEGETABLE EXPORTS SURGE ON GLOBAL DEMAND
Việt Nam’s fruit and vegetable exports have made a strong start to the year, with rising shipments and tighter compliance with international standards helping producers tap robust global demand, according to the Vietnam Fruit and Vegetables Association. The association reported export earnings of nearly US$532 million in April, bringing total export value to $2.06 billion in the first four months of the year, up 22 per cent year-on-year.
