GET READY FOR CRABFEST 2021
Elite Concepts invites you once again to sample the delicious delights of their innovative crab dish creations at all restaurants.

Hong Kong (14 September 2021), the crabs are back at Elite Concepts. The restaurant group is launching Crabfest 2021 which will run from September 21 to November 30, offering new creations cooked up by their expert chefs.
Crabfest was first launched in 2019 and was a big success among the Elite loyal customer base. The participating restaurants are Nanhai No.1, yè shanghai (Hong Kong & Kowloon), Deng G, Deng G Sichuan, Nhau, and La Taverna, and both à la carte and set menus will be available at most of the restaurants with each will offer its own signature crab dish.
At Nanhai No.1, the specialty dish will be Sea Salt Encrusted Virgin Crab with Scallions & Shallots, where the Virgin crab is steamed with sea salt, before shallots & green chives, stir-fried in butter, are then added to the crab and steamed until fully cooked. The end result is crabmeat that is tender & sweet.
At yè shanghai Hong Kong we’re serving Baked Stuffed Crab Shell, a smooth, silky dish created with crabmeat and egg white. Much skill is involved with the chef in removing the crabmeat, but we think you’ll agree it’s well worth the effort when you taste.
At yè shanghai in Kowloon you can feast on Drunken Freshwater Crab in Taidiao. This dish is another main draw that presents the authentic freshness of the crab. Savour the succulent crab flesh which has been immersed in fragrant wine for at least ten days
to ensure maximum flavor.
Mud crabs are another specialty, defined by their life stages in Chinese, with each stage offering a different tasting experience. This year you can try Old Fashioned Pungent Mud Crab at Deng G, a female mud crab a golden kind of crab cream.
At Deng G Sichuan (Former Shu K) in Tsim Sha Tsui, the specialty is Chili Matsuba Crab, which is cooked with generous amount of Sichuan peppercorn and minced garlic, giving you both the numbing flavors, as well as the sweetness of the Matsuba crab imported from Hokkaido. If you like your heat, this is the dish to order.
At Nhau, look for Soft-shell Crab in Tamarind Sauce, a Vietnamese twist on soft-shell crab, cooked with tamarind sauce and calamansi, giving it a deliciously sweet tanginess.
Finally, La Taverna, the newest edition to the Elite Concepts portfolio, will be presenting a uniquely Italian alternative to the Crabfest offerings, serving Fettucine with Crab and Nduja.
The dishes will also be paired with wines and alcohol choices carefully selected to complement the crab dishes. For example, Arbois “Savagnin Ouillé” Domaine du Pélican, which brings a freshness and an intense bouquet which will reveal the delicate flavors of the crab.
Cannonau di Sardegna, a red Sardinian wine, high in antioxidants, its low tannin and beautiful acidity are key to making it the perfect pairing to complement the crab meat.
And Taidao yellow wine from yè shanghai, which is well known as being the perfect complement to hairy crab, with the warmth of the wine contrasting with the cooling effect that crab has on our bodies, with its sweet taste also enhancing the sweetness of the crab. The Taidiao is poured exclusively at yè shanghai, in two varieties - aged 8 years to bring out the intense, herby, and lively with raison nutty flavors, or aged 20 years for a mellow, gentle flavour.

VIETNAM GETS US$2.64 BILLION FROM SEAFOOD EXPORTS IN Q1

US$250-MILLION DEAL ADVANCES VIETNAM’S GREEN CREDIT PUSH
